Cancers of the oral cavity and oropharynx account for 3% of all malignancies in the United States and are the sixth most prevalent cancers worldwide. These cancers have one of the lowest five and ten year survival rates among major cancers. Epidemiological studies show that consumption of fruits and vegetables results in a significant decrease in oral cancers. I am using animal models of oral cancer to determine the ability of whole fruits (black raspberries, strawberries, avocado, oranges) to inhibit the progression to oral cancer when given after tumor initiation events.
