Areas of Expertise: functional foods, carotenoid metabolism, LC analysis of carotenoids, tomato health benefits

My research focuses on tomatoes as functional foods and this allows me to interact with groups in other disciplines, such as medicine, nutrition, and chemistry. I believe that this collaboration across departments will help lead to a greater understanding of the proposed health benefits of carotenoids. With this knowledge, we will be able to give better recommendations to the public and design better food solutions.
