My research explores the possibility of improving nutrient delivery through the development of food grade polymer microdevices (similar to drug delivery microparticles) for the encapsulation of oxidation-sensitive bioactive compounds to deliver them safely through the stomach to the intestine. We are developing a biomimetic microfluidic system that will allow us to test the attachment of these microdevices to a mimetic intestinal wall with peristaltic pressure waves. Microencapsulation will allow us to fortify food with nutritional additives without affecting the texture or appearance through optimized delivery to the intestine for uptake into the body.
