My research focuses on material science of lipids and fatty food systems. By developing new techniques for structuring and nano-engineering of lipids, and understanding their functional properties in food systems, my research establishes structure-function relationships for fatty food products.This will propose new insights for better selection of raw materials, improve food processing and eventually enhancing human health.
