Areas of Expertise: fresh meat quality assessment, trained and consumer palatability assessment, food animal production expertise, food animal production auditing, niche meat production and marketing
My background and scientific expertise in food animal production, encompassing small and large animal units, allows me to support outreach, instruction, and research priorities for local, targeted, and commodity food production sectors. My existing research involves consumer and trained sensory assessment of fresh meat characteristics that influence palatability. I have been actively involved in animal harvest and fabrication, including the fundamental knowledge of HACCP and food safety protocols. I am actively involved in on-site animal welfare assessment and auditing programs. I believe the sum of these attributes will provide a reasoned, knowledgeable body of expertise to address Food Innovation Center initiatives.
