Areas of Expertise: lutein, fish oil, atherosclerosis

I will bring my expertise in immunology to the Food Innovation Center. I study the beneficial effects of "designer eggs" in several disease models; the latest being "atherosclerosis". My lab is equipped to enrich/deplete any nutrient from the egg by manipulating the diet of the parent hen or even the grandparent stock. My expertise in lutein/carotenoids/fish oil has excellent collaborative potential with several current members of FIC.
